It feels a bit strange to welcome fall into the kitchen with a recipe that tastes so much like summer, like this amaretti cake with peaches and chocolate.

It’s all because of this summer, which began in May and still doesn’t seem ready to end, even though the calendar says otherwise.

Finally, temperatures are dropping a bit, giving us days that are still mild but less summery. So, taking advantage of the last of the summer harvest, even though I’ve never before found local peaches this late in the season, especially in October, it’s the perfect chance to turn the oven back on without making the house sweltering.

So, here is a recipe for a home-style amaretti cake.

It’s one of those recipes where all the ingredients go into the same bowl; all you need is a spoon, though if you have an electric mixer, even better; and finally, they go into the oven, where they blend together, filling the air with a lovely aroma and creating a delicious, slightly old-fashioned flavor.

This is an easy recipe and, above all, a versatile one because you can substitute the fruit to adapt the recipe to each season.

It has a slightly old-fashioned amaretti flavor. You’ll need to crumble the amaretti by hand into the egg and sugar mixture (I use brown sugar, but granulated works too), just before adding the flour mixed with baking powder all at once.

You can use 00 flour (all-purpose flour) or even spelt flour (when I have it on hand, I use the latter).

This amaretti cake is moist and soft but not overly leavened; the yeast amount is just right to make it airy inside and light on the palate.

As I told you before, the cake is versatile, and you can make it even after peach season ends. For variations, I recommend using peaches in syrup, be sure to drain them well, if you’d like to keep that flavor; or replace the peach in the recipe with one apple, or two if they’re small.

The fruit, cut into thin slices, should be arranged on the bottom of the pan since it is an upside-down cake. Fold any remaining fruit pieces into the batter right before baking.

This isn’t a cake for parties or special occasions. It’s more of a cozy family treat, perfect for breakfast or an everyday snack. For me, since I rarely eat sweets during the day, it’s perfect for after dinner.

Amaretti cookies

These cookies remind me of Italian grandmothers.
I don’t know if that’s a good reason to keep a box of them in the pantry, but I grew up with a grandmother who always had them on hand and used them often, and today they’re a staple in my kitchen, too.

Here are three recipes, two sweet and one savory, where amaretti really make a difference!

Equipment

  • Electric whisks

Ingredients

  • 1 yellow-fleshed peach, about 350 g
  • 100 g of all-purpose flour
  • 5 g of baking powder
  • 3 eggs, about 150 g
  • 130 g of brown sugar
  • 100 g of amaretti cookies
  • 60 g chocolate chips

Instructions

  • Preheat the oven to 180 °C (350 ° F) on the conventional setting.
  • Peel and halve the peach, remove the pit, and slice thinly. Set aside.
  • In a bowl, combine and mix the flour and baking powder. Set aside.
  • In a different bowl, beat the eggs and sugar with an electric mixer for a few minutes, until light and fluffy.
  • Crumble the amaretti cookies with your fingers directly into the egg mixture.
  • Add the flour all at once.
  • Stir with a spatula to combine.
  • Add the chocolate chips and stir.
  • Line the bottom of the pan with a piece of parchment paper cut to size, wet it, and squeeze out the excess.
  • Sprinkle two tablespoons of brown sugar over the bottom of the pan. Then, cover the bottom with the peach slices. If there are any leftovers, add them to the cake batter.
  • Pour the batter over the peaches and bake for 40 minutes. Test with a toothpick; if it comes out clean, the cake is ready.
  • Let it cool outside the oven.
  • Invert the cake onto a serving plate, remove the parchment paper, and garnish the top with a couple of crushed amaretti cookies.

Tips

  • Store at room temperature for a few days.
  • Replace the peach with 1 apple or a few pieces of peach in syrup.
