The first fava beans of the season are perfect for a fresh and colorful salad, and ideal for a healthy and quick lunch (for salad lovers and those on the go).
300 g fava beans
300 g cherry tomatoes
200 g mozzarella
extra virgin olive oil, salt and pepper
Shell the beans, then wash and dry. Slice the tomatoes in half, and the mozzarella into cubes. Mix everything together and season with olive oil, salt and pepper.
