As I often say, simple food is ordinary in a comforting way.
Mr. Giovanni’s sausages
Giovanni and his wife Laura are lifelong friends of my parents.
She is thin and tiny. He is tall, sturdy, and has a great passion for cooking.
Over the years, I have heard rants and tasted many of his dishes.
Among them, I remember sausages cooked with potatoes and peppers altogether.
And in the same way, I used to watch nonna while she cooked before from the threshold of the kitchen, then sitting in a corner with a promise not to go near the stove, as I did with Giovanni.
I see Giovanni again laying the fresh herbs, he grows himself, on the bottom of the pan. Then he arranges the ingredients following specific order: aromatics, sausages, vegetables, and, last, the bread. The old one is to be recycled.
Then he puts the pan on the stove and seals it with the lid. This recipe has a quick cook. And indeed, shortly after, he appears at the table with the pot.
The moment of opening the pot is accompanied by a chorus of exclamations. Excitement arises from the rich scent of the herbs, the sweeter fragrance of the cooked potatoes, and the sour note of the bell pepper. Overall, there is the fragrance triumph of the sausages.
It is a simple dish where the ingredients cook quickly and in close contact, allowing a secret and happy exchange of moods. The bread comes next, in the mouth, with a soft and flavorful bite.
I do not add salt; the salt from the sausages is enough. Before serving, I remove the woody part of the aromatics, which, after cooking, is now stripped of the rosemary and thyme leaves.

Sausages, potato and pepper pot recipe
List of Ingredients
Italian, fresh sausage, 500 g
2 bell peppers
3 large potatoes
2 sprigs of rosemary, a few sage leaves, fresh or dried thyme (or oregano)
bread (also dry), to taste
white wine, 50 ml
vegetable or meat broth, 150 ml
Wash aromatics and keep them aside.
Wash peppers, cut in half and remove stem and seeds. Cut into pieces and set aside.
Peel potatoes and cut them into pieces. Set them aside.
Remove skin from sausage and cut into pieces.
Prepare the pot. Place the aromatics on the bottom, add the sausage, and cover with peppers and potatoes. Drizzle with olive oil.
Put on the stove and cook for 5 minutes on medium-low heat.
Deglaze with the wine and cook for a few minutes before adding the stock, move the sausages around, and finally put the bread (whole if dry, in pieces if fresh) in the pan.
Cover the pot with the lid and cook for 15 minutes over medium-low heat.
After this time has elapsed, finish cooking with the pan uncovered.
Reduce the sauce a little and serve the sausages hot.
