Hot Summer season calls fresh and quick dishes without long-cooking.
I really love to organize Summer garden meal with some friends. I love to set a beautiful table and serving homely Summer good food.
Usually I cook a couple of cold salads or of vegetables side dish, a main dish like a cold meatloaf (or vegetarian) and before the dinner I serve some ‘stuzzichini’. In italy stuzzichini are little savory treats like bruschette and so on.
I eat every kind of salad and always I love them. And for this reason often I try new recipes and sometime I develop my own salad recipes. It happened I did this super easy and quick to make Summer salad and from the first time I loved it!
If you think to organize a garden dinner or you need a super easy idea for lunch, this is a perfect recipe for you! A fresh, easy, healthy, quick, elegant, and more yet, salad.
I often set up it to my last-minute dinner with friends. I definitively say that is one of the best salad for the Summer!
- Garden dinner: served by candle light in your garden, it will be successful!
200 g of watermelon pulp
150 g of arugula, wash and dry
100 g of feta cheese
juice of 1/2 lemon
1 teaspoon honey
salt and pepper
extra virgin olive oil
Let’s start with vinaigrette. In a bowl, mix the lemon and honey and whisk or blend together adding in extra virgin olive oil, salt and pepper. Cover and set aside in the refrigerator until ready to use.
Chop the watermelon (removing seeds and rind) and feta into little cubes. On a ceramic dish, place before aragula and then watermelon and feta cubes.
Combine with the dressing and serve without mix.
Inspired by this recipe from the Barefoot Contessa’s Ina Garten, we added honey and fresh lemon juice (instead of vinegar) for a slightly sweet vinaigrette.
