Apple frittelle is a delicacy sweet treat that my grandma Sara made during the Carnival season.
During this time of the year, every Italian city opens her cookbook to the many classic recipes that accompany this fried feast! Yes, along with the carnival masks and bags of confetti that mark this time of year, at the table, you’ll find something fried fruit or cream, you name it!
We’ve added a bit of marsala to the batter, perfect for the adults who also want to celebrate Carnival!
200 g flour 00
pinch of baking powder
100 g granulated sugar
2 tablespoons marsala Florio
milk to taste
filtered juice of one organic lemon
granulated sugar to garnish
To prepare the batter, mix the ingredients in the following order using a whisk: flour, baking powder, sugar, egg, milk and marsala. Make sure the batter is soft but not too runny.
Wash and peel apples, chopping into 1 cm slices and sprinkle with lemon juice. Dip them into the batter and fry in hot vegetable oil, cooking for a couple of minutes on each side. Dry on paper towels and sprinkle with granulated sugar. You’ll want to serve them while still hot.
